SUPER GREEN SUMMER ROLLS WITH TANGY MISO SAUCE

“The crisp crunch of these super green summer rolls is so satisfying. They make a great appetiser to a summer meal for friends or keep a batch all to yourself. Either way, they are delicious and the miso sauce will have you licking the bowl. Plus, they are a great way to pack more greens into your meal. Greens, such as spinach, are high in calcium, magnesium, zinc and Protein”

Makes about 10 rolls

Prep time: 30 minutes          

Difficulty: Easy

SUMMER ROLLS

10 rice paper sheets (click to purchase online)

1  medium avocado, peeled and sliced

2  cups (80g) spinach

1 small cucumber, ribboned

½ cup (20g) coriander leaves

1 tablespoon sesame seeds

TO SERVE

½ cup tangy miso sauce 

METHOD

Prepare all summer roll ingredients and squeeze lemon over sliced avocado to preserve its freshness.

Carefully fill a large, deep plate with hot but not boiling water. Slide a rice paper sheet into the bowl of water and gently submerge. Wait two minutes until the rice paper becomes translucent before removing and placing on a flat, smooth surface.

Immediately place another sheet of rice paper into the plate of water.

Fill your prepared rice paper sheet with a little of all the summer roll ingredients and gently roll, folding the sides in as you go. Repeat this process for the remainder.

Serve with tangy miso sauce! 

TANGY MISO SAUCE

“Umami, the beautiful Japanese word for savoury taste, is balanced perfectly in this sauce with sweetness, sourness, bitterness and saltiness. It can be added to salads and nourish bowls, used as a dipping sauce or stirred through noodles and veggies to make a scrumptious tangy thai kelp noodle salad. I highly recommend sourcing a good quality brand of authentic miso from the fridge section of your health food store. It will make all the difference to the flavour of this sauce.”

Makes 1 cup

Prep time: 10 minutes

Difficulty: Very easy

1 medium lemon, juiced

1  teaspoon garlic powder

2  tablespoons miso* (click to purchase online)

2 tablespoons hulled tahini* (click to purchase online)

2 tablespoons coconut aminos*  (click to purchase online)

METHOD

Add all ingredients to your blender. Pulse to combine and blend until smooth.

Store in a glass jar in the fridge for up to one week.
