Wholegrain stoneground wheat and biodynamic rye flours are combined with sprouted rye mash and given a long fermentation to impart a distinctly robust flavour and rustic substance to this bread.
The rye flavour is at the fore in this loaf capturing the essence of Northern European baking heritage. This loaf has a moist dense cakey interior and a sublime caramelised crust.
Ingredients:
- Certified Organic & Biodynamic flours (stoneground wholegrain, wholemeal wheat, white wheat flour, stoneground wholegrain rye flour)
- Twice filtered ‘Grander’ water
- Certified Organic sourdough culture
- Certified Organic rye sprouts
- Natural sea salt
- Natural vitamin C
